I’m so excited to share this Skinny
cupcake recipe. I have seen these all over Pinterest, but didn’t really believe that they would be good. However,
skinny cupcakes recipe was a HIT and it was delicious. I highly recommend you
try it.

Ok – back to my recipe! I’ve been trying to eat
better, but for some reason all I can think about is desserts!! So of course I
had to try this Sprite zero cupcake. You only need two ingredients:
Yes, you only need Sprite Zero and a cake mix. I used Lemon, but I think
strawberry, funfetti, and cherry chip would also be delightful. I’m not sure
about chocolate… I might have to try it this weekend.You just need 1 cup and 1/2 of Sprite Zero and a cake mix. Then you mix them together in a bowl.
It will fizz… a lot, so don’t freak out. I was worried at
first.
However, after you keep stirring it will stop. Continue stirring it until
the lumps are out.Pour into your your cupcake pan. I used liners just like you would for a normal cupcakes. My batter filled 20 cupcakes. After doing the math…..
An entire batch of these cupcakes is 1600 calories. However, I made 20 cupcakes so they are only 80 calroies each! Woohoo! This is a delicious treat for under 100 calories. Of course, if you made 24 cupcakes, they would only be 66 calories each. I didn’t think my batter would make it to 24 cupcakes, so I am happy with 20 delicious cupcakes for very little calories.

Now, I thought these were good, but I was nervous about the kids? I mean
would they notice the no eggs and no oil in there? Nope, not at all. They all
had two and begged for a third! I didn’t however let them have the third,
because what was I going to eat after they were asleep. I also gave one to my baking friend. She is the master of baking everything… I mean she is always baking. She ate one and couldn’t believe that there wasn’t any egg or oil in there. Woohoo… mission accomplished!!
